Happy 2nd Birthday Bailey!

Can it really be 2 years since my baby was born? Where has the time gone!!??

I am so blessed to have been given the responsibility of raising this precious little girl. There are so many things I could say, but words just fail to convey what an amazing girl she is and how much Anthony & I love her.

Meal Plan Monday

My life is so crazy right now! I guess Decembers are always like that, but I worked 4 days last week and am working 3 days this week. All you working moms.... I don't know how you do it! My house is suffering big time while I am working. Not to mention how I hate leaving Bailey so much. I think just since she is used to being with Mommy everyday it has been hard on her to be away from me so much... and definitely hard on Mommy to be away from Bailey so much! Anyways, I am really looking forward to Thursday being over so I will be done with working!

On to the (rather simple) meal plan (due to the prior-mentioned work that is draining me and the abundance of Christmas parties).

Happy Birthday Zoe!

Today, my Zoe girl turns 6! So hard to believe! Thought I would recount her birth story, from my view of course, for anyone who may not have heard it.

I was in my junior year of college when Zoe was born. It was Wednesday before Thanksgiving break started. I was in the Bruckner Learning Center where I was a grader for one of my former professors. Seth called to let me know that Ashley had an appointment that morning and they were sending her to the hospital, so that would be the day! I was SO excited and burst into tears before running around letting my professors know that I would not be there the next day.

We had a Thanksgiving dinner on my floor night, and I really did not want to miss it, so I ate as fast as I could before packing my things up and heading for home. I was almost the hospital, getting off exit 91 from 64, when my phone rang. It was Ashley, and she said "She's here!". "Who's here?" I said. Haha! Of course, I missed the arrival by just a few minutes. Though I didn't get to see her first, I was the first one outside of the birthing room to know of her arrival. :)


















Zoe came hom from the hospital on my birthday, November 19th and I tell her that she was my present.



She has been SUCH a huge blessing in my entire family's life and I truly cannot imagine life without her. Love you Zoe Girl!

An Update

Well... I am blogging, and it's not a meal plan! I just felt like I should give an all-over update on our lives. Hopefully I can get at least 2 sentences worth. ;)

I cannot believe it is time for the holiday again already. They're not kidding when they say, the older you get, the faster time goes. Though I also think the saying for stay-at-home mom's, the years are fast, but the days are slow, is applicable as well. I kind of live my life looking forward to the next big event (currently, Thanksgiving visit with Anthony's family), or even just the next exciting activity out of the house (currently, going out with friends for dinner and a movie on Friday)! The days seem to be dragging on to those.

I think I should treasure each and every day more, just for being a day that I get to spend with my girl. I try to do fun things with her, but I guess I get easily bored with toddler activities! :) So does anyone have any toddler craft/activity blogs or websites that they follow? If you do, PLEASE pass them on!

Speaking of Bailey, I was just comparing her with an old picture the other day and it really dawned on me, that she is not a baby anymore. But I love the young lady that she is turning into. She is very polite and usually well-behaved. I haven't been pushing potty training a lot, but she is making some progress. She is definitely over her fear (or maybe just resistance?) of sitting on the potty.... maybe to the opposite extreme! :) Now she loves to sit on the potty and read books. She'll sit there for the longest time, often producing no "results" but at least she is getting comfortable there. Yesterday she pooped (first time!) and peed in the potty! I really love watching her learn and grow. I'm so thankful that God chose her for our family.

In the "grocery game" department, I am still going strong. I may have my best month, savings-percent wise, to date. I am at about 70% savings for the month, and I shouldn't have much more shopping to do since we will be spending a few days with Anthony's family, and because I am so well stocked up.

I've started going to Martin's on Tuesday mornings, when they clearance their meat, and that has been SO helpful. Then I just plan my meals around whatever meat I can find. It has also forced me into buying things I would not normally buy, because it is just too good of a deal to pass up. We have been eating a lot more pork lately, which I think Anthony has enjoyed! These chicken-fried pork chops in the slow cooker that we had last week were REALLY good! Highly recommend trying those. :) Though, if they are very thick, which ours were, make sure to cook them the whole 8 hours at least. I cooked mine for 7 hours and they weren't quite done so I popped them in the microwave to finish them off. Anyways, I hope my meal plans bring you soem good suggestions, and if you have any recipes you love, please please please pass them onto me!

And finally, it looks like there is finally an end in sight for Anthony's grad school. I believe he has decided to go with the research paper option instead of the class work option. This will cut his time down by at least one semester, maybe more. So it looks like he should be done by May of 2012, which is still a while, but I'm glad there is a light at the end of the tunnel now.

We cannot wait until he gets the extra pay for finishing that. Our finances are probably the tightest they have ever been right now, due mostly to Waynesboro cutting back on extra things they pay for (as well as not getting expected pay raises). Anthony has always done so many extra things for the school, and in the past has gotten paid for them, but due to their finances being tight, they had to cut some of those things out. So for now, I try to avoid looking at the checkbook balance because it stresses me out, and instead just trust God to provide for us. He has always done so in the past, and I know he won't stop now.

Well, there you go. That's the latest with us. Hope I didn't bore anyone! :)

My Pumpkin Puree Tutorial :)

I would consider myself to be somewhat domestic. We don't eat out much, so I make most of our meals, and a minimal number of them are things that are just popped in the microwave or oven. :)

We (yes, both of us) bake yummy goodies from time to time, and I REALLY get on a baking kick during the holidays.

However, I am really not one that cares about eating organic or all-natural or any of those good things.

So when I do something that is "all natural" it makes me feel really good about myself! :)

So here's my pumpkin puree tutorial.


You need a pumpkin. I use pie pumpkins (and they are best for this), but you can really use any kind of pumpkin. Break off the stem and cut that bad boy in half.


















Scoop out all the "guts". It's nice to have a helper. Grossed-out facial expression totally necessary.






















This is how they should look when you are done scooping. Don't let her fool you, I did most of the work.


















Then you place the pumpkins, open-side down in a pan, with about a cup of water.


















Bake at 350 for about 90 minutes, until the flesh is really tender.


















Let them cool for a little while. Here's what they'll look like on the inside.






















Then you scoop out the flesh. I pretty much scooped out everything, all the way down to the skin.


















Then throw it in your food processor. I didn't put it all in at once, but just added a little bit more at a time.


















I would say I pureed for probably a good five minutes at least. Make sure it's nice and smooth.


















Take whatever you're not going to use right away (or within the next couple days), and freeze. I got probably about 4 1/2 to 5 cups of puree from the two pumpkins I used.



















And there you have it... one of my most domestic feats yet. :)

....and totally redeem yourself!

You go and do something like this, Kroger, and totally redeem yourself!

Ten points to anyone who can name that movie! :)

But really, I hit the jackpot with Kroger today. They were on my bad side after my last trip, but the did, "totally redeem" themselves today. They are having a General Mills, buy 4, get $6 off promotion and one of my items, the Nature Valley granola bars were not ringing up as part of the promotion, but they should have been (tags on the shelf showed they were). The cashier went and got some help from a manager (I'm assuming that's what she was) and she was super nice and when she saw that the item on the shelf did indeed show that it was a participating item, she took the $6 right off for me, with no problems.

And guess what? The big time managers were in a meeting today while I was there.... I wonder if they would have given me problems if they were the ones to help?? Hopefully not, but I can't help but wonder.

Anyways, onto the important stuff....

Here's what I got:

7 bags of Chex Mix
2 boxes of Cinnamon Toast Crunch
2 boxes of Reese's Puffs
4 boxes of Chex cereal (to make Chex Mix at Christmas time- yummy!)
5 boxes of Nature Valley granola bars
















Total paid: $5.51
Retail price: about $50, for a savings of almost 90%

I am telling you, no matter how many times I get great deals like these, the rush never goes away! :)

Pretty good... I feel like I was well stocked up on a lot of things this month and most weeks didn't need to buy a whole lot during my regular Walmart trip. Also had a few extra "nights out" this month, what with the wedding and planning and all that good stuff.

I'm Back!

Shoooo! What a whirlwind of a week it has been! I don't really have any of my own pics to share since I was a little busy during the wedding, but I did steal some from friends so hopefully I can share some more of those soon.


















The wedding was FABULOUS! I think it went even better than I imagined. We have gotten SO many compliments on everything, from the music (Vitamin String Quartet, look them up on itunes if you haven't already!), to how beautiful we all were looking (a girl's got to have her day every now and then, right?), to the cake balls we had at the reception (people actually asked us where we bought them.... ummm, we MADE them, all 900 of them! My shining moment!). I mean, I know I may be a little biased, but I really think it was one of the best weddings I have ever taken part in.
I am happy beyond words for my sister and Zoe and am thrilled to have such a wonderful brother-in-law! :)

Five days till my little sister is married! I am SOOO excited for the rehearsal/wedding to get here, but I also kind of want this week to go slow because I will be so sad when it is over. I have had the BEST time helping Ashley plan the wedding. We have a lot to do in the next few days, but we will get it done, for sure. Roasted Chicken & Veggies

So I know this recipe is already on my meal plan, but I just had to do a special post recommending it. We ended up having it tonight, instead of earlier in the week, like I had planned. Kelly's recipe calls for 2 lemons, but the 2 previous times I had made it, it was WAY too lemony for our taste. So tonight when I made it, I just used 1 lemon. Used half of it to layer the bottom, and half for the juice to coat the beans and potatoes. I also used chopped garlic or something like that, whatever I had in my spice cabinet, instead of fresh garlic cloves.

Anyways, using just the one lemon made SUCH a huge difference. It was perfection and so delicious! If you have not made this recipe yet, you HAVE to try it!!!

August Grocery "Budget"

I say "budget" because I don't really have a set number that I strive to be under. I just spend the least amount possible and trust that it will be good enough! :)

This includes groceries, toiletries, diapers, etc. Anyways, here's how August went...

I spent a total of $212.74 this month. Higher than last month, but this included shopping for Ashley's bridal shower and 5 weeks worth of shopping, whereas July only had 4 weeks of shopping.

My total before savings (including store promotions and coupons) was $515.60.

That brings my total savings for the month to $302.86. So even though I spent more this month than I would have liked, still not too shabby.

19 Month Update

Well, it's been 2 weeks since Bailey had her 18 month checkup with Dr. Bob (she was actually 19 months at the time of the visit), but I still wanted to share her stats and what is going on with her these days.

She weighed 27 pounds, which is between the 75th and 90th percentile. She was 25 pounds at 12 months, so she's gained less than 2 pounds in the past 7 months so I was glad to hear that our little chunk has slowed down a little bit. :) I'm sure that has a lot to do with being so active and also cutting way back on nusing as well.

She was 31 3/4 inches tall, which is almost to the 50th percentile. I'm still waiting on her to shoot up because Anthony is definitely tall and I'm above average for height, so where did this short little girl come from??? :)

Luckily, she didn't have to get any shots at this visit, since she got "loaded up" last time. Probably a good thing since she started to cry a little bit as we were walking back towards the exam room... I'm thinking she must have remembered being there and getting shots last time. So hopefully, since this checkup was a good experience, she won't be sad next time we got there.

Dr. Bob said she looks great and he was really happy with her stats and her development!



















I swear, this girl just amazes me every single day. Just a couple of weeks ago, on a Wednesday night, we were getting ready to leave church. Bailey came outside with my mom and saw me, but Anthony wasn't around and she said "Where Daddy go?" and it just kind of blew me away... my 19 month old making a 3 word sentence! And her new thing now is to answer the question herself... "Where Daddy go? I don't know". Haha!

Our persistence at using "please" and "thank you" is paying off big time, as she is VERY polite and all the time saying those words as well as "bless you" when someone sneezes. It just melts my heart to hear her say "Thank you Mommy", which is how she always says it to me.

She is usually very well behaved and we don't have to punish her very often. I am working on teaching her about "obeying", and doing so right away. It's so funny to hear her say "obey". I'll say "You need to obey Mommy" or "You obeyed Mommy, good job!" and she echoes back "obey?" like she is processing what that means... so cute.

Recently Zoe taught her how to "scoot" down the stairs at Mom's house (we don't have stairs in our house) so that is her new thing, and is she ever fast at it! Though I'm just waiting for the tumble to come sooner or later. She LOVES Zoe and wants to do anything and everything that Zoe does.

I am finding that I absolutely LOVE this age. She is old enough to really play with and take her to do fun things but she is so sweet and definitely still has some "baby" in her so I feel like I am getting the best of both worlds right now. I cannot begin to tell you how extremely blessed I feel to have Bailey as my daughter. And to think, before time began, this was God's plan... really, there just are no words to describe it.

Ashley's Bridal Shower

This past Sunday, I (along with LOTS of help from friends) threw Ashley a bridal shower after church. We did it right after church, so we had a sandwich bar for lunch, as well as pasta salads, potato salads, chips, cupcakes, and dump cake. It turned out really well and was a lot of fun. Wanted to share some pics from the afternoon. Didn't really get any action shots, which I am sad about, but at least I can remember the spread. :)

Last Day of Summer

The last Friday before Anthony had to be back at school, we went to Gypsy Hill Park in Staunton and then to eat at Chili's for our "last sha-bang" (how do you spell that?) of the summer. I LOVE that park and really wish the Staunton and Waynesboro parks were switched so we were closer to this one. :)

Harris Teeter Doubles, Round Two

I hit up Harris Teeter again today because my mom had a $10 off catalina that she wasn't going to be able to use so she gave it to me. Here's what I got.... thanks to the next Vanna White for her help with my purchases......














2 boxes Carnation Instant Breakfast (this is what Anthony has for breakfast everyday)
2 boxes Aunt Jemima mini pancakes
2 boxes Aunt Jemima waffles
1 package Mission tortillas
2 packs Activia yogurt
2 packs YoCrunch yogurt
1 box Kellogg's fruit snacks
1 bag Uncle Ben's Ready Rice
2 packs Wholly Guacamole


Total before Savings: $45.93
Total VIC savings: $4.64
Total Coupons: $37.45


Total Savings: $42.09 or 92%
Total OOP: $3.84


I just LOVE Harris Teeter and not only because they do super doubles and super triples. Let me count the ways...

1- Generally speaking, the cashiers are coupon friendly. I did have one bad experience there, but every other time, they have been great. They don't question me or make me feel like I am a crook for using coupons.
2- They have free cookies for kids.
3- They have yummy samples, also good for entertaining Bailey while I shop.
4- They have free balloons for kids.

So basically, to sum it up, they are helpful and accepting of couponers, AND they have food to occupy Bailey while I shop. :)

So busy..

Well, as you can see, I've been slacking as far as the blogging goes lately. I've been working some @ Staunton Foods, wedding planning with my sister Ashley (less than 6 weeks away now!), and trying to soak up these last few weeks of summer with my husband and I feel like I am SO busy right now. I never knew a SAHM could be so busy! So just wanted to let everyone know that I fully plan on getting back into blogging better as soon as my life calms down.

Hopefully, things will be better 2 weeks from now. Then, Anthony will be back at school like normal, and the food show will be over, so I'll be done working. On second thought, that might not be true since then it will be less than 4 weeks from the wedding, and there are still so many things to do! Anyhow, I'll get back into it sometime. :)

In the meantime, you can at very least still count on meal plans from me. :)

Meal Plan Monday

Wanted to throw in a few comments before I share our meals for the week. When I was in VA Beach last time, visiting with Amanda, she mentioned that it looks like we hardly ever have any vegetables with our meals. It definitely looks that way from my meal plans, but we DO have vegetables, I just don't plan those ahead of time. I just find whatever we have available when the time comes to make dinner, as far as veggies go. :)

Also, the reason I never have a plan for Sunday is because Sunday is a "free-for-all" day for us, if you will. Actually, for the past couple months, someone in our lifegroup brings food every week, so we usually are not hungry when we get home. Even if that's not the case, we just eat whatever we can find on Sunday nights. Oftentimes something from the freezer... pizza, bagel bites, pizza rolls, something along those lines. I know, healthy, right? :)

On to this week's plan... minus vegetables and Sunday. :)

Meal Plan Monday... Late Again

Can't believe it's August already!! We were gone to VA Beach this past weekend again so I'm late with the meal plan since we just got home last night. Had a great time with family, got to meet our new nephew Jack, and my best friend, Amanda's new baby Maribel. I got to spend LOTS of time cuddling her and even got to be there for her first real bath! These new babies are giving me major baby fever! :) We also went to Busch Gardens on Friday and Monday and of course had lots of fun there. On to the meal plan!

Busted...

Two weeks ago, I was out in the living room and Bailey had wandered into the bathroom, like she often does. However, this time was different. I'm sitting on the couch and I hear the water come on. Before I went to assess the situation, I thought to myself, "I think I might want my camera for this", and I was right.

This is what I peeked around the corner to see...



















She had figured out that she could climb up onto the toilet, turn on the water, and "brush" her teeth all by herself!















And now, she won't stop! She "brushes" her teeth multiple times a day.
















Just more evidence that my baby is not so much a "baby" anymore. Ohhhh, but I wouldn't change her for the world.
